Ingredients:
DRY
-1 1/2 cups Flour
-1 1/2 tsp Cinnamon
-1 1/2 tsp Baking Powder
-1/2 tsp Salt
*A CINNAMON-Y TWIST: ADD ‘Cinnamon Toast Crunch Cereal’ at the base of the cupcake liner before adding batter on top!*
WET
-6 tbsp Unsalted Butter
-2 tbsp Veggie Oil
-1 cup Sugar
-1 1/2 tsp Vanilla Extract
-2 Large Eggs
-3/4 cups Milk
Recipe:
1. pre-Heat your oven to 350F and line your cupcake tray
3. Add your butter into a new bowl. Add your oil and sugar
4. use a mixer to beat together on medium. It will have a crumby consistency but will become lighter and a bit fluffy. This will take about 4 minutes
5. Add one egg at a time and mix on medium in between each until well combined
6. add half of the set aside dry ingredients into the bowl of wet ingredients. Mix with mixer until well combined. This will take about 3 minutes. Scrape the edges of your bowl.
7. add half of the portion of milk into the batter and mix until well combined.
8. add remaining dry ingredients and remaining mild portion. Scrape the edges and mix for one more minute. Do not overmix batter.
9. Portion batter into cupcake liner and pop the tray into the warm oven for 18-22 minutes or until toothpick/test pick comes out of cake with no batter
10. A CINNAMON-Y TWIST: Add ‘Cinnamon Toast Crunch Cereal’ to the base of your cupcake liners or cake pan before adding your Cinnamon spice batter on top!
